Red Lentil Soup 💕
Full of the nourishing goodness of garlic, chilli & thyme this is a beautiful winter warming soup for the soul. Red Lentils are full of plant proteins, Iron and prebiotics for gut health. Prebiotics help the good bacteria in the gut to flourish which helps overall digestion and a healthy microbiome environment. It was also so easy to make and I finally found a way to use my red lentils which have been patiently waiting for me in the cupboard.
Garlic (however much you want) more the merrier I believe but I put in 3 big cloves and then some.
1 brown onion
2 tomatoes roughly chopped
1 big cup of dried red lentils (washed thoroughly)
2 carrots roughly chopped
1 Litre vegetable stock
Chilli, thyme and salt & pepper to taste.
In a large saucepan on medium heat, sauté garlic, onions and tomatoes in a little olive oil. Add washed lentils, carrots, stock, chilli & thyme.
Bring to boil, reduce heat and simmer for 30 minutes or so. Once cooked, season and blend with a stick blender until smooth. Easy peazy !!!
